Crispy AIP Waffles

Throughout my AIP journey, I've often found that texture has a lot to do with cravings. I crave foods my body doesn't do well with, not for the food itself, but for the texture of the food. Crispy on the outside and soft and doughy in the middle is one that is missed quite often. It's not that I can't find those textures in AIP approved foods, it's just that it takes a little more effort to produce.
That being said, these waffles are super easy to put together (as long as you have he ingredients, of course). If you are an avid AIP baker, you'll most likely have these ingredients on hand. Crispy AIP Waffles
Ingredients:
(makes 3 waffles)
1/2 cup tigernut flour
1/2 cup arrowroot flour
1/2 cup cassava flour
1/4 cup grass-fed unflavored (or flavored if you'd prefer!) collagen powder
1/4 cup coconut cream
1/8 cup maple syrup
1 cup coconut milk
1 Tbsp apple cider vinegar
1 tsp baking soda
Instructions:
Pre-heat your waffle-making device
Mix all dry ingredients (tigernut flour, arrowroot flour, cassava flour, collagen) together in a medium-sized mixing bowl
Add the rest of the ingredients to the dry ingredients and mix well with a spoon
Pour 1/3 of the batter into your waffle-making device and cook until you're able to easily lift the lid and the waffle starts to brown (this took roughly 6-8 minutes on high in mine)
Remove the waffle and add toppings as desired!
